Ingredients

  • 1 medium onion, chopped

  • 1½ cups cooked chopped light meat chicken

  • 2 cans chopped green chilies

  • 3¼ cups green enchilada sauce or salsa verde

  • 2 cups pinto beans, soaked over night

  • 3 cups water

  • 1 tbsp chili powder

  • 1½ tsp ground cumin

  • 1 tsp salt

  • ½ tsp black pepper

Cooking Instructions

Preparation Time 3 min | Cooking Time 12 min:
10 servings | 112 Calories | 9g Protein | 14g Carbohydrates | 25g Fat

A perfect and spicy way to use up leftover chicken breasts.

  • Saute onion and chicken with seasonings until onion is tender.

  • Add beans, chilies, enchilada sauce and water.

  • Boil until beans are tender.

  • If desired this soup is wonderful served with a bit of crushed tortilla chips and shredded cheddar cheese on top.
