Ingredients

  • 1 large head cauliflower

  • ¼ cup diced celery

  • ¼ cup diced vidalia onion

  • ¼ cup sweet pickle relish

  • 2/3 cup light mayonnaise

  • 3 tsp Splenda

  • 4 tbsp yellow mustard

  • 2/3 tbsp cider vinegar

  • salt & pepper to taste

  • 3 hard boiled eggs

Cooking Instructions

Preparation Time 10 min * | Cooking Time 8 min:
4 servings | 179 Calories | 9g Protein | 15g Carbohydrates | 10g Fat

This is a great substitute for potato salad. The next time I have to bring something to a barbeque, I am going to make this and see if someone notices the difference!

  • Boil the cauliflower for about 8 minutes in salted water. Let cool and cut into cubes. *

  • Mix all ingredients (except for the hard boiled eggs) together and pour over cauliflower.

  • Chop hard boiled eggs and mix into salad mixture. *

* Let the cubed cauliflower and hard boiled eggs sit overnight in the refrigerator before adding ingredients together. What results is a nicely chilled salad.
