Chicken Andouille Sausage With Mustard Sauce:

Ingredients

  • 4 spritzes olive oil cooking spray

  • 5 dashes Creole seasoning or to taste

  • 1/4 cup red bell pepper, thin strips

  • 1/4 cup green bell pepper, thin strips

  • 1/4 cup white onion, thin strips

  • 1 cup low sodium chicken broth

  • 3 tbsp honey mustard

  • 2 tsp white wine vinegar

  • 1 tsp thyme, ground

  • 4 smoked andouille chicken sausages, precooked and sliced (approximately 9 oz.)

Cooking Instructions

4 servings | 139 Calories | 12g Protein | 6g Carbohydrates | 7g Fat

A quick and spicy, yet surprisingly light meal!

  • Heat 4 spritzes of cooking spray in a large skillet over medium heat.

  • Sautee peppers and onions until just shy of tender.

  • Add creole seasoning and sausage. Heat for 1 more minute.

  • Add chicken broth, honey mustard, white wine vinegar, and thyme. Simmer until sauce thickens.

  • Serve over rice.
