Mini Crustless Chicken Spinach Feta Quiche:

Ingredients

  • 1 1/4 cup of egg whites eggbeaters

  • 1 12.5 oz can of chicken chunks

  • 1 cup of feta cheese

  • 1¼ cup of skim ricotta cheese

  • ½ cup of canned spinach

  • garlic salt to taste

  • pepper to taste

Cooking Instructions

Preparation Time 10 min | Cooking Time 20 min:
35 servings | 36 Calories | 4g Protein | 1g Carbohydrates | 2g Fat

Small mini muffins of crustless quiche made of chicken, feta, spinach, ricotta, & egg whites. Low fat and low carb.

  • Put all of ingredients into a large mixing bowl and mix with a spoon, breaking up the chunks of chicken so it will be uniform throughout the mixture, as well as the spinach.

  • Spoon a small amount into a greased 24 count mini muffin tin/pan. Will have mixture left over.

  • Bake for 20 minutes.

  • Add the rest to another tin/pan or wait until the first batch has gotten out of the oven and cooled.

  • Makes 35 mini muffin quiches, unless less is added to each mini muffin cup. Don't overfill.
